Started this day off rather slow but did have a wrap with hardboiled egg. Lunch was at Roly Poly with Thai Tuna and a snack in the afternoon of a smoothie. Dinner was at home and I got home early - about 7 PM - but then forgot to photograph. We had a wrap with homemade hummus, greens and a small amount of cheese, followed by a great evening of sitting on the front porch.
What a beautiful day! We had a great breakfast with scrambled eggs with some leftover salmon mixed in and salsa on top. Then a snack later in the morning with a smoothie of pear, banana, apple and peanut butter. Then Karen made a raw lasagna - her first go at it - and it was wonderful. Did you know that you can make a ‘cheese’ from cashew nuts? It was unbelievable in taste and texture. The noodles were zucchini slices. Mixed with the cashew cheese was sundried tomato and some very good pesto. Do not mistaken raw, vegetarian or vegan with low calorie. This was not low calorie - it was delicious. We ran out to run some errands and on our return it had set enough to try some. We split one slice.
Dinner was the lasagna and a bowl of asparagus soup made with fresh asparagus. The soup was made with greek yogurt which was better for you than the cream that was suggested and very tasty. Just a side note; If you have not tried a Vita-Mix for chopping and blending this is the best and most important tool in our kitchen. Have you seen I put one at the studio too?
Another day of forgetfulness. Breakfast was a power sandwich at Panera. Lunch was a tuna salad on rye at the bagel shop - best tuna salad. A little snack of hummus and chips in the afternoon and an early dinner of salmon, mashed potatoes and asparagus. Went over on the calories today but had a decent work out so it all even outs.
I missed a day of telling about my diet. More on that in the next post. But on Friday my day looked like this; Breakfast started with a smoothie of banana and pear and a hardboiled egg (not in the smoothie) Lunch was at Dimeo’s who has the best mushroom pizza I have ever eaten and a portobello salad. Dinner was a beet salad with a piece of fish and dessert was a key lime pie. (all within calorie budget)
A day full of activity many times leaves you not eating well. But when everything is in place you can do so very effectively. That is how my day was today with breakfast starting with a english muffin and hardboiled egg. Lunch right after the first set of classes with with a smoothie of pear and banana and a later lunch / snack of 2 wraps with hummus and raw vegetables. Finally dinner at 9:30 of salmon creamed asparagus and mashed potatoes. Thank goodness for good planning.
Today I started very simple with a hard boiled egg on a roll and added some of my black bean hummus. Lunch was at Zoe’s Kitchen with a Pimento Cheese sandwich and a salad. That is a pick 2 option and very good lunch. Afternoon snack to get me through the evening was a Power bar - and dinner was very special, an ear of corn with truffle salt and a few tomatoes along with a little bit of hummus and pita chips. The corn was unbelievably sweet for this time of year. It came from Fresh Market, which is fast becoming one of my favorite places to shop for groceries.
Today I decided to start with a smoothie, so I made a banana and mango smoothie. Lunch was quick wrap at Roly Poly, Thai Tuna. Another smoothie in the afternoon and dinner was a wrap of veggie burger, hummus, salsa and greens. Add to that a cookie and that was my meals for the day.
Today started off with me being very hungry - so even before breakfast I had already eaten a whole bagel with cream cheese. Then a great breakfast of poached eggs with salsa. Off to do some errands and then lunch of a salad with a small piece of fish left over from yesterday’s lunch. An afternoon snack from our juicer - apple/celery/carrots it was so good and Karen is sold on the idea of juicing. Dinner was a quiet one for us enjoying the best crab cake in Annapolis area with green bean and half a baked potato.
One more thing - I made hummus this weekend and had a snack in the afternoon. It was easy to do and really good.
A very active day today that started with a simple scrambled egg on a roll and a little cream cheese. Later in the morning I had half of a bagel with cream cheese. Lunch was early afternoon with a salmon and vegetables. Honestly too much oil in the vegetables and not really that good - but I did follow it with a brownie and chocolate mousse. MMM… Didn’t need much food after that meal but dinner was shrimp panang (a thai dish) this day was way above my normal calorie intake. It OK though - lots of activity.
Today I started off with a small bowl of oatmeal and a hardboiled egg. The oatmeal had a little brown sugar. Lunch was my next meal as time did not let me get a snack in and this was a bar b que salmon salad from Paladar. It was very good. Then in the afternoon I had a yogurt between classes and another event at the studio prior to dinner of Quorn ‘chicken’ cutlet, rice and beans, and sliced tomatoes. If you never tried a Quorn product, I love them, they are a great meatless product.
